Smothered Chicken - cooking recipe

Ingredients
    1 fryer
    1/2 c. oil
    1/2 c. chopped onion
    1/2 c. chopped celery
    2 small green onions with tops
    water
    salt and pepper
Preparation
    Cut chicken as for frying.
    Salt and pepper on all sides. Brown quickly in hot oil.
    Pour off most of the oil.
    Add onion and celery; cover and cook about 5 minutes, or until vegetables are tender.
    Add about 1/2 cup water; cover and continue to cook over low heat until chicken is tender.
    Serve over hot rice.
