Cranberry Nut Cheese Ball - cooking recipe

Ingredients
    1 c. dried cranberries
    1 c. chopped nuts
    1 tsp. finely chopped ginger root (or use dry)
    1 Tbsp. freshly grated orange peel
    2 Tbsp. orange juice
    8 oz. cream cheese
Preparation
    Combine 1/2 cup dried cranberries, 1/2 cup nuts, ginger, orange peel, orange juice and cream cheese.
    Shape into ball; wrap in plastic wrap and chill 1 hour.
    Roll sides of ball in 1/2 cup chopped nuts and press 1/2 cup dried cranberries into top.
    Serve with crackers and celery sticks.
    Fat-free cream cheese works well.
