Harvest Bread - cooking recipe
Ingredients

3 c. sugar
4 eggs (may substitute 5 egg whites)
1 c. vegetable oil
2 c. mashed sweet potatoes
1 (6 oz.) can concentrated orange juice, thawed
3 1/2 c. plain flour
1 1/2 tsp. salt
2 tsp. soda
2 tsp. each cinnamon and nutmeg
1/2 tsp. each nutmeg and cloves
1 c. chopped pecans
Preparation

Use electric mixer and beat well the sugar, oil and eggs.
Add by hand (blending) potatoes, orange juice and all dry ingredients sifted together.
Stir in nuts.
Pour into desired size loaf pan that has been greased and floured.
Fill half full.
Bake at 350\u00b0 for 45 minutes or until done tested.
