Carrot Soup - cooking recipe

Ingredients
    12 carrots
    2 c. onions
    3 Tbsp. butter or margarine
    1 1/4 c. orange juice
    1 qt. chicken stock
    optional garnish: plain yogurt, chopped parsley
Preparation
    Slice carrots (in Cuisinart, if available).
    Cover with water; simmer for 40 minutes, but don't boil.
    Drain.
    Dice or shred onions (in Cuisinart).
    Saute in butter or margarine in large pot. Add chicken stock and carrots.
    Simmer for 40 minutes.
    Puree in Cuisinart (or blender).
    Add 1 1/4 cups orange juice.
    Serve hot or cold with dollop of yogurt and parsley.
    Serves 4.
