Pineapple Upside-Down Cake - cooking recipe

1/2 c. shortening
1 c. sugar
2 well beaten eggs
2 c. flour
2 tsp. baking powder
1/4 tsp. salt
1 (No. 2) can pineapple slices
3/4 c. pineapple juice
4 Tbsp. butter
1 c. brown sugar
1 small jar maraschino cherries
Preparation

Cream together shortening and sugar; add beaten eggs.
Sift together flour, baking powder and salt; add to creamed mixture alternately with pineapple juice.
Mix well.
Simmer together in 9-inch skillet brown sugar and butter.
Arrange pineapple slices on top of butter and sugar mixture.
Place one cherry in center of each slice; pour batter over all.
Bake at 350\u00b0 for 50 minutes. Turn out at once.
