Veal Or Chicken Sicilian - cooking recipe

Ingredients
    2 lb. veal or chicken (pounded very thin)
    flour
    salt
    fresh black pepper
    1/4 c. olive oil
    6 shallots, minced
    1 (1 lb. 3 oz.) can artichoke hearts, drained and cut in half
    1/2 c. dry white wine
    1 box petite peas, frozen
    1/2 c. chicken broth (boiling)
Preparation
    Dredge meat in flour, salt and pepper mixture.
    Brown lightly in hot oil.
    Set aside.
    In same skillet, saute artichokes and shallots about 5 minutes.
    Add wine, peas and chicken broth, simmer 5 minutes.
    Push vegetables to one side and return meat to skillet.
    Simmer 2 to 3 minutes.
