Eggplant Casserole - cooking recipe

Ingredients
    3 eggs, well beaten
    1 eggplant, cut in cubes and cooked until tender
    1 onion, grated
    1/2 can pimentos, chopped
    1/4 c. melted butter
    1 c. milk
    1/2 lb. sharp Cheddar cheese, cubed
    1 c. soft bread crumbs
    1 tsp. salt
Preparation
    Combine ingredients; pour into buttered casserole dish and bake for 45 to 60 minutes at 325\u00b0.
