Sausage, Escarole And Potatoes - cooking recipe

Ingredients
    1 1/2 lb. mild sausage
    1 heavy head escarole
    6 Idaho potatoes
    1 onion
    oil to fry
    salt to taste
Preparation
    Wash potatoes, quarter and boil until tender.
    Boil escarole. Cut mild sausage into 1-inch rings.
    Put oil in a nonstick skillet and fry sausage with onion.
    Drain and add escarole.
    Drain and add potatoes.
    Fry on low for about 30 to 40 minutes.
    Delicious 1 pot meal.
    Easy to serve.
