Apple Raisin Pie - cooking recipe

1/2 c. pkg. brown sugar
2 Tbsp. all-purpose flour
1/2 tsp. grated lemon peel
1/4 tsp. cinnamon
1/4 c. whipping cream
2 Tbsp. apple cider or apple brandy
6 c. thinly sliced cooking apples
1/2 c. raisins
1 Tbsp. margarine or butter
Preparation

Take a pastry for a double-crust pie (pastry dough) and divide in half.
Roll half of the dough on a lightly floured surface into a 12-inch circle.
Wrap the pastry around a rolling pin.
Unroll on a 9-inch pie plate, being careful not to stretch the pastry. Trim to 1/2-inch beyond the edge of the pie plate.
Roll the remaining pastry to a 14-inch wide strip; set aside.
