Ingredients

1 pkg. strudel dough or phyllo sheets
1 small onion, finely minced
6 Tbsp. margarine
3/4 lb. mushrooms, peeled and finely chopped
3 eggs, separated
4 Tbsp. bread crumbs
salt and pepper

Preparation

Cook onion in 2 tablespoons butter, covered, 10 to 15 minutes. Add chopped mushrooms, salt and pepper to taste.
Cook, over very low heat until there is no liquid left in pan (but fat remains). Stir to prevent burning.
Let this mixture cool to room temperature.
Preheat oven to 375\u00b0.
Beat egg whites until stiff. Beat egg yolks.
Add yolks and whites to mixture.
Add bread crumbs.
Spread filling on strudel sheets at one end.
Sprinkle with remaining melted butter.
Roll strudel very loosely so eggs can expand.
Place in buttered baking dish or pan.
Bake for 30 to 35 minutes until crisp and golden.
