Apple Raisin Muffins - cooking recipe

Ingredients
    3/4 c. vegetable oil
    1 c. sugar
    2 eggs
    1 tsp. vanilla
    2 c. all-purpose flour
    3/4 tsp. baking soda
    3/4 tsp. ground cinnamon
    1/2 tsp. salt
    1 1/2 c. diced apples
    1/2 c. raisins
    1/2 c. chopped walnuts
Preparation
    Preheat oven to 400\u00b0.
    Grease muffin pan. In a large bowl, beat oil and sugar with electric mixer for 2 minutes. Add eggs and vanilla. Beat 1 minute.
    In another bowl, stir together flour, baking soda, cinnamon and salt. Add dry ingredients to oil mixture. Stir just to combine. Stir in apples, raisins and walnuts.
    Spoon batter into prepared muffin cups.
    Bake 20 to 25 minutes or until tester comes out clean. Remove muffin tin to wire rack.
    Cool 5 minutes and remove from pan. Finish cooling on rack. Freezes well.
