Sweet Potato Casserole - cooking recipe

Ingredients
    6 large sweet potatoes, cooked and peeled
    1 c. butter or margarine, softened
    grated rind of 2 oranges (and their juice)
    4 eggs
    1/2 c. sugar (optional)
Preparation
    Beat sweet potatoes with electric mixer until fluffy.
    Add butter, orange juice and rind, eggs and sugar. Beat well.
    Spoon potato mixture into 3-quart casserole. Cover with topping. Bake at 350\u00b0 for 30 minutes.
