Fresh Vegetable Gumbo - cooking recipe
Ingredients

4 large ripe tomatoes, peeled
6 okra pods, sliced 1/2-inch thick
2 ears white corn, cut off cob
1 c. butter beans
1 medium onion, chopped
1 Tbsp. bacon drippings
salt and pepper
1/2 c. water
pan drippings
1 1/2 c. water
2 Tbsp. flour
salt and pepper
Preparation

Drain all oil out of skillet, leaving just the pan drippings. Cut the heat on medium-high; add the flour and stir to combine well.
Slowly add the water, stirring constantly, until thickened. Add salt and pepper to taste.
Cut heat on low until served.
If gravy is too thick, add a little more water and stir well.
You won't get lumps in your gravy if you stir the flour in first with the drippings and then add the water and stir constantly.
