Creamed Spinach - cooking recipe

Ingredients
    3 Tbsp. butter
    1/4 c. all-purpose flour
    1/4 tsp. salt
    1 c. whole milk
    1/2 c. sour cream (low fat is okay)
    2 Tbsp. butter
    2 Tbsp. minced onion
    1/4 c. water
    2 (10 oz.) boxes frozen spinach, thawed, chopped
Preparation
    Over medium low heat, melt 3 Tbsp. butter in a saucepan. Stir in flour and salt until creamed together. Stir in milk a little at a time. Increase heat to medium. Constantly stir with a whisk until mixture becomes thick and smooth. Remove from heat and set aside. Saute onions in 2 Tbsp. butter until transparent. Add spinach and water to pan; lower the heat and cover. Stir several times until the spinach is almost completely cooked. When spinach is almost done, stir in prepared sauce and sour cream. Stir well and simmer until completely blended.
