German Potato Salad - cooking recipe

Ingredients
    3 lb. new potatoes or red potatoes
    1 cucumber, sliced thin and salted down (squeeze out water)
    1/4 c. onion, chopped fine (may substitute green onion)
    3 slices crisp bacon, chopped
    1/4 c. olive oil
    1/4 c. vinegar
    salt and pepper to taste
Preparation
    Boil potatoes al dente.
    While still warm, slice thinly, pennywise.
    Add olive oil to keep potatoes from sticking together. Add squeezed-out cucumber.
    Add onion, vinegar, salt and pepper. Marinate at least 1/2 hour.
    Add bacon and top with chives.
    Serve at room temperature.
    Serves 6.
