Cracklin' Corn Bread - cooking recipe
Ingredients

4 oz. finely diced pork fat (1 c.)
1 c. corn meal
1 c. all-purpose flour
1 tsp. baking soda
3/4 tsp. salt
1 c. buttermilk
2 beaten eggs
Preparation

Fry pork fat until crisp.
Drain, reserving 1/3 cup of drippings.
In large bowl, mix together corn meal, flour, baking soda and salt.
Add buttermilk, eggs and drippings.
Beat until smooth.
Stir in cracklings.
Bake in a greased 10-inch skillet at 425\u00b0 until done (about 15 to 20 minutes).
Serve warm.
Makes 6 servings.
