Pollo Relleno(Stuffed Chicken) - cooking recipe
Ingredients

6 medium skinless, boneless halves (about 1 1/2 lb.)
1/3 c. cornmeal
1/2 (1 1/4 oz.) pkg. taco seasoning mix (2 Tbsp.)
1 beaten egg
1 (4 oz.) can whole green chili peppers, rinsed, seeded and cut in half lengthwise (6 pieces total)
2 oz. Monterey Jack cheese, cut into 6 (2 x 1/2-inch) strips
2 Tbsp. snipped cilantro or parsley
2 oz. Cheddar cheese or Monterey Jack cheese, shredded
1/4 tsp. black pepper
1/4 tsp. crushed red pepper
1 (8 oz.) green/red taco sauce
Preparation

Rinse chicken and pat dry.
Place each breast half between 2 pieces of plastic wrap.
Pound chicken with a meat mallet to 1/8-inch thickness.
Remove plastic.
