Egg Rolls - cooking recipe

Ingredients
    2 1/2 lb. cabbage head, quartered and sliced thin as you can long
    5 stalks celery, cut thin crosswise
    2 or 3 large white onions, cut lengthwise and sliced thin
    1 Tbsp. oil
    salt to taste
    egg roll wrappers
    egg whites
    2 c. chopped chicken or shrimp
    soy sauce to taste
Preparation
    Using a wok or heavy deep pan, add oil.
    Add celery and onions; cook until tender and crisp.
    Remove and set aside.
    Add 1 tablespoon oil, 2 tablespoons water, all of cabbage and salt to taste; cook until limp.
    Drain in colander.
    Add chopped chicken or shrimp. Add soy sauce to your taste; set aside to drain for 10 to 15 minutes.
