Tropical Chicken - cooking recipe

Ingredients
    1 medium onion, sliced
    1/2 c. finely diced celery
    1 Tbsp. oil
    2 Tbsp. each cornstarch and soy sauce
    2 c. diced, cooked chicken
    1 large tomato
    1 small green pepper, cut into 1/4-inch strips
    11 oz. chicken broth (about)
    1 (8 oz.) can pineapple chunks
    hot cooked rice (long grain or brown)
Preparation
    I cook two or three chicken breasts. I usually use it all.
