Pineapple-Berry Boat - cooking recipe

Ingredients
    2 medium pineapples
    2 pt. raspberries or strawberries
    1/3 c. raspberry preserve
    3 oz. pkg. softened light cream cheese
    1 Tbsp. no-fat milk
    1/2 tsp. finely shredded lemon peel
    2 tsp. lemon juice
    1/2 c. whipping cream
Preparation
    Cut pineapple in half lengthwise.
    Using a sharp knife, cut out the pineapple meat, leaving the pineapple intact.
    Cut off hard core, then cut in chunks.
    Combine pineapple chunks and raspberries or strawberries.
    Mound into pineapple shells.
