Super Natural Bran Muffins - cooking recipe

Ingredients
    1 c. whole bran cereal (All Bran or Bran Buds)
    1 c. boiling water
    1/2 c. vegetable oil
    1 1/4 c. sugar
    1/4 c. honey
    2 eggs
    2 c. buttermilk
    2 1/4 c. whole wheat flour
    2 1/2 tsp. baking soda
    1 tsp. salt
    2 c. granola
    Optional: raisins, walnuts, chopped apples
Preparation
    In 2-3 quart container stir together bran and water.
    Let stand until water is absorbed.
    In another large bowl combine oil, sugar and honey.
    Mix well.
    Add eggs and beat well.
    Mix in buttermilk.
    Mix oil mixture into bran mixture in the large container.
    In another bowl combine and mix flour, soda, salt and granola.
    Slowly blend these ingredients into bran mixture.
    Cover and refrigerate batter for several hours or overnight.
    Spoon batter into greased muffin tins.
    Bake in 400\u00b0 oven for 22 to 25 minutes.
    Batter will keep refrigerated for 4 weeks, if tightly sealed.
