Oven Fried Chicken #1 - cooking recipe

Ingredients
    1 (2 1/2 to 3 lb.) chicken, cut into pieces
    1/4 c. shortening
    1/2 c. all-purpose flour
    1 tsp. salt
    1 tsp. paprika
    1/4 c. pepper
    1/4 c. cracker meal
Preparation
    Wash chicken and pat dry.
    In a 13 x 9 x 2-inch pan, melt shortening.
    Mix all dry ingredients and coat chicken pieces. Place chicken, skin side down, in melted shortening.
    Bake at 425\u00b0 for 30 minutes.
    Turn chicken; cook 30 minutes longer or until thickest piece is tender.
    Yields 4 servings.
