Corn Cakes - cooking recipe
Ingredients

1 c. corn meal
1 c. flour
1/4 c. sugar
3 tsp. baking powder
2 Tbsp. oil
1 c. buttermilk
1 tsp. baking soda
1 egg white
3 ears fresh sweet corn, cooked, cooled and cut off cob
1/2 medium onion, minced
1/4 sweet red bell pepper, minced
Preparation

Combine all ingredients and stir.
Roll and drop by tablespoon on hot nonstick griddle or frypan until golden brown.
Makes 30 small cakes.
