Sour Cream Rhubarb Pie - cooking recipe
Ingredients

1 unbaked pie shell
3 c. cut up rhubarb
1 c. plus 2 Tbsp. sugar
1 Tbsp. flour
8 oz. cream cheese, softened
2 eggs
1 c. sour cream
1 tsp. vanilla
Preparation

Mix rhubarb with flour and 1/2 cup sugar.
Put into a pie shell.
Bake at 425\u00b0 for 15 minutes.
Remove from oven.
Reduce heat to 350\u00b0.
Meanwhile, mix the cream cheese, eggs and 1/2 cup sugar.
Pour over hot rhubarb.
Bake at 350\u00b0 for 30 minutes.
Mix sour cream, vanilla and 2 tablespoons sugar.
Pour over hot pie. Chill before serving.
