Raisin Soaked Beets - cooking recipe

Ingredients
    1 (1 lb.) can sliced beets
    1/4 c. sugar
    1 tsp. cornstarch
    2 Tbsp. butter or margarine
    1/3 c. light or dark raisins
    3 Tbsp. lemon juice
Preparation
    Drain beets, reserve 1/3 cup liquid.
    In medium saucepan, combine reserved beet juice and raisins.
    Cover.
    Simmer until raisins are plumped, about 5 minutes.
    Combine sugar and cornstarch, stir into raisins in pan.
    Add lemon juice and butter, cook and stir over medium heat until slightly thickened.
    Stir in beets and simmer until mixture is heated through, about 5 minutes. Garnish with a twist of lemon.
