Applesauce, Canned - cooking recipe

Ingredients
    4 medium cooking apples
    1/4 c. sugar or more to taste
    2-inch stick cinnamon
Preparation
    Wash, pare if desired, quarter and core cooking apples. Simmer, covered, with cinnamon in a small amount of water until tender, about 10 minutes.
    Remove cinnamon.
    Press apples through sieve.
    Stir in sugar.
    Reheat to boiling.
    Pour, boiling hot, into hot sterilized jars, leaving 1/2-inch headspace.
    Stir with rubber bottle scraper or other non-metallic spoon to remove air bubbles. Adjust caps.
    Process pints and quarts 20 minutes in boiling water bath.
