Corn Fritters - cooking recipe

Ingredients
    3 or 4 ears fresh corn or 1 (8 3/4 oz.) can whole kernel corn
    1 1/2 c. all-purpose flour
    1 Tbsp. baking powder
    1 beaten egg
    1 c. milk
    fat for frying
Preparation
    Cut kernels off ears of corn to make 1 cup.
    Stir together flour, baking powder, and 3/4 teaspoon salt.
    Combine egg, milk, and corn.
    Stir in dry ingredients; mix just until moistened.
    Heat 1 1/2 inches oil to 375\u00b0 in skillet that is a least 3 inches deep. Drop batter by tablespoons into hot fat.
    Fry until golden brown, 1 1/2 to 2 minutes per side, turning once.
    Drain on paper toweling. Serve with warm maple syrup, if desired.
    Makes 24 fritters.
