Pea Cottage Cheese Soup - cooking recipe
Ingredients

1 c. raw chopped potatoes
1 c. chopped raw celery
1/2 c. chopped raw onion
1/2 c. chicken broth
1/4 tsp. salt
1/8 tsp. pepper
1/2 tsp. crushed dry basil
2 c. cream-style cottage cheese
1 (8 oz.) can peas, drained
1 c. milk
Preparation
-
In 2-quart
saucepan
combine
potatoes, celery, onion, chicken broth, basil, salt and pepper.
Bring to boil.
Reduce heat, cover and simmer 15 minutes until vegetables are tender. Meanwhile, in blender,
combine
cottage cheese, peas and milk and blend, covered,
until
smooth.
Stir
mixture
into
the cooked vegetables and heat.
Do not allow it to boil.
Makes 6 generous servings.
