Tofu Lasagne - cooking recipe

Ingredients
    1 clove garlic, minced
    1 (1 lb.) can tomatoes (undrained)
    2 (6 oz. each) cans tomato paste
    1 Tbsp. sweet basil
    1 (10 oz.) pkg. regular or whole wheat spinach lasagne noodles
    3 c. tofu
    1/2 c. grated Parmesan cheese
    2 eggs, beaten
    2 Tbsp. parsley flakes
    1 tsp. fennel leaves (optional)
    1 tsp. salt
    1/2 tsp. ground pepper
    1 lb. shredded Mozzarella cheese (4 c.)
Preparation
    Combine minced garlic, undrained tomatoes, tomato paste and sweet basil in small saucepan.
    Simmer for 30 minutes to make sauce.
    Set aside.
