Easy Manicotti Florentine - cooking recipe

Ingredients
    1 c. frozen spinach
    1 c. low-fat cottage cheese
    1/2 c. part-skim Ricotta cheese
    1/4 tsp. pepper
    2 c. low sodium tomato sauce
    6 oz. (8) uncooked manicotti shells
    2 1/4 oz. part skim shredded Mozzarella cheese
Preparation
    Combine spinach, cheeses, pepper and salt until well blended. Stuff uncooked shells.
    Pour 1 cup sauce plus 1/4 cup water into an 11 x 7-inch pan.
    Place shells in pan; cover with remaining sauce. Cover with foil; bake until shells are tender, 45 to 50 minutes, at 375\u00b0.
    Uncover; sprinkle with Mozzarella cheese and bake 10 minutes longer or until cheese is melted and bubbly.
