Grecian Style Beef(48 Servings) - cooking recipe

Ingredients
    7 1/2 lb. spinach, frozen
    12 lb. ground beef
    1 1/4 lb. onion, chopped
    4 garlic cloves, crushed
    1 qt. tomato paste
    3 Tbsp. salt
    1 1/2 tsp. cinnamon
    4 oz. margarine, melted
    1/3 c. lemon juice
    4 lb. elbow macaroni
    1 3/4 lb. Cheddar cheese, grated
    24 eggs
    2 c. flour
    1 gal. milk
    1/3 c. salt
    2 tsp. pepper
    2 tsp. nutmeg
Preparation
    Defrost spinach; drain.
    Cook ground beef, onion and garlic until just browned.
    Pour off drippings.
    Add tomato paste, salt and cinnamon to meat.
    Cook until heated through.
    Combine butter, spinach and lemon juice; mix well.
    Cook macaroni; drain.
    Add 3 cups cheese to macaroni; mix well.
    Spray three 20 x 12 x 2-inch pans with Pam.
    Layer, starting with 2-quart macaroni mixture, then 3 1/2 cups spinach mixture, 2 1/4-quart meat and 1 quart macaroni mixture.
    Sprinkle each with 1 1/3 grated cheese.
    Beat eggs; add flour, milk, salt, pepper and nutmeg; mix well.
    Pour 1/3 egg mixture over each pan.
    Cover tightly; bake at 375\u00b0 for 1 1/4 hours.
