Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. vegetable oil
    2 c. grated zucchini
    2 c. all-purpose flour, sifted
    1 tsp. soda
    3 tsp. cinnamon
    2 c. sugar
    3 tsp. vanilla
    1 tsp. salt
    3/4 c. chopped nuts
    1/4 tsp. baking powder
Preparation
    Beat eggs until foamy.
    Add oil, sugar, zucchini and vanilla; mix lightly.
    Add dry ingredients; mix well, then beat in chopped nuts.
    Pour into 2 well-greased loaf pans.
    Bake at 350\u00b0 for about 1 hour and 20 minutes.
    This bread freezes well.
