Elegant Eggplant Casserole - cooking recipe
Ingredients

2 medium-sized eggplant, peeled and diced
1 medium-sized onion, chopped
4 tomatoes, peeled and diced
1 green bell pepper, chopped
1 stalk celery, sliced
1/4 c. melted oleo
1 egg, beaten
3/4 c. grated Cheddar cheese
1 clove garlic, mashed, or 1/8 tsp. garlic powder
1 tsp. salt
1 tsp. pepper or 1/2 tsp. if you do not like it hot
dash of Tabasco
1 tsp. Worcestershire sauce
3/4 c. cracker or bread crumbs (I used seasoned croutons)
Preparation

Saute onions, garlic, peppers and celery in the oleo until soft.
In the meantime, boil eggplant in small amount of water for 5 minutes.
Drain.
Combine sauteed vegetables, eggplant, tomatoes, eggs, cheese, salt, pepper, Tabasco, Worcestershire sauce and crumbs.
Place in greased casserole dish in a 350\u00b0 preheated oven for 30 minutes.
Serve at once.
