Tabouleh(Middle East) - cooking recipe

Ingredients
    1 1/4 c. raw bulgur wheat
    1 1/4 c. minced parsley
    3/4 c. minced mint
    3/4 c. minced onion
    1 c. chickpeas, drained (optional)
    3 tomatoes, chopped (optional)
    3/4 c. lemon juice
    1/3 c. olive oil
    1 tsp. salt
Preparation
    Pour 4 cups boiling water over bulgur wheat; let stand 2 hours.
    Drain well.
    Mix with other ingredients.
    Chill at least 1 hour.
    Serve over lettuce or in pocket pita bread.
