Ingredients

2 1/2 c. cold water
1 small pkg. sugar-free vanilla pudding (not instant)
1 small pkg. sugar-free strawberry Jell-O
Preparation

Combine ingredients in pan and cook until boiling. Cook until mixture begins to thicken. It will still be thin. Let cool until lukewarm. Slice fresh strawberries (as many as you want) into a cooked pie shell and pour mixture over berries. Chill in refrigerator until jelled. Top with Cool Whip just before serving. Low-fat.
