Baked Potato Casserole - cooking recipe
Ingredients

8 medium to large baking potatoes
2 small cans evaporated milk
1/2 lb. Velveeta cheese
10 slices bacon, cooked crisp
1/3 c. chopped chives
1/2 c. margarine
1 c. sour cream
Preparation

Boil potatoes in their skins until done but not mushy.
Cool and chop into small cubes (skins on).
Heat margarine, milk and Velveeta cheese in saucepan until completely melted.
Fold in potatoes.
Put into 9 x 13-inch pan and bake 30 to 40 minutes until bubbly.
Spread sour cream over the top and sprinkle with crumbled bacon and chopped chives.
