Chicken Minestrone Soup - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1 (8 oz.) boneless chicken breast
    4 large cloves garlic, pressed
    1 large onion, chopped
    2 c. celery, finely chopped
    2 1/2 c. zucchini, sliced into thin circles
    1 (28 oz.) can plum tomatoes in juice, coarsely chopped (save juice)
    2 c. chicken broth
    3 c. water
    2 tsp. red wine vinegar
    1 tsp. sugar
    2 tsp. dried basil
    1 tsp. dried oregano
    1/2 tsp. dried thyme
    1/2 tsp. cayenne pepper
    salt and pepper
    1 (15 oz.) can Northern white beans
    1 c. spiral pasta
    fresh grated Parmesan cheese
    fresh, chopped basil or parsley
Preparation
    In soup pot, saute chicken in oil.
    Cut chicken into bite size pieces and set aside.
    Saute garlic and onion in remaining oil. Add celery, zucchini, tomatoes with juice, chicken broth, water, herbs, spices, chicken and beans.
    Simmer, covered, for about 30 minutes.
    Add pasta and simmer for 15 more minutes.
    Taste and add additional seasoning, if desired.
    Serve topped with grated cheese and parsley or basil.
    Lots of ingredients, but worth it.
