Eggplant-Tomato Casserole - cooking recipe

Ingredients
    6 slices bacon
    1 green pepper, chopped
    4 medium tomatoes, peeled and chopped
    1/2 tsp. salt
    1/2 c. cheese, shredded
    1 medium onion, chopped
    1 large eggplant, peeled and cubed
    1/2 tsp. pepper
    1/2 c. soft bread crumbs
Preparation
    Cook bacon until crumbly; remove.
    Saute pepper and onion in bacon drippings until tender.
    Add eggplant and tomato, cook 5 minutes.
    Stir in salt and pepper.
    Spoon mixture into a greased 2 quart casserole dish.
    Top with crumbled bacon, cheese and bread crumbs.
    Bake at 350\u00b0 for 25 minutes, uncovered.
