Potato Candy - cooking recipe

Ingredients
    1 medium Irish potato
    1 box confectioners sugar
    3/4 to 1 c. peanut butter (plain or crunchy)
    1 c. chopped pecans
Preparation
    Boil the potato until done.
    Cool completely; peel and mash potato.
    In another bowl, add a little of the potato and sugar alternating.
    Put in a little sugar to the side.
    Continue mixing potato and sugar until it becomes thick like a pie crust. Sprinkle remaining sugar on a dough board; roll out the potato and sugar mixture to about 1/2-thick thick.
