Shrimp Stuffed Peppers - cooking recipe

Ingredients
    2 medium green peppers
    1/2 c. cooked rice
    6 oz. cooked tiny shrimp
    1/4 c. tomato puree
    1 tsp. horseradish
    dash of pepper sauce
    1/8 tsp. lemon juice
    salt and pepper to taste
Preparation
    Remove stem end and seeds from green peppers. Dip in boiling water; let stand for a few minutes and drain. In a mixing bowl, combine rice, shrimp, tomato puree, horseradish, hot pepper sauce and lemon juice. Mix well.
    Season to taste. Stuff peppers with mixture and bake at 425\u00b0 for 25 minutes or until thoroughly heated and peppers are tender. Makes 1 serving.
