Sunday Gumbo - cooking recipe
Ingredients

1 lb. boneless skinless chicken breast, cubed
3 Tbsp. olive oil
1 medium onion
3 celery ribs, chopped
1 tsp. marjoram
1 tsp. thyme
1/2 tsp. garlic powder
1/2 tsp. cayenne
3 (14 1/2 oz.) cans chicken broth
2/3 c. uncooked brown rice
1 (14 1/2 oz.) can diced tomatoes
1 lb. medium shrimp, peeled and deveined
2 c. frozen sliced okra
Preparation

In Dutch oven, brown chicken in oil. Remove with slotted spoon and keep warm. In drippings, saute onion and celery until tender. Stir in seasonings, broth, rice and chicken; bring to a boil. Reduce heat; cover and simmer 20 to 30 minutes or until rice is tender. Stir in tomatoes, shrimp and okra. Cook 10 minutes or until the shrimp turn pink, stirring occasionally.
