Lemon Blossom Pie - cooking recipe
Ingredients

3 egg yolks
2 tsp. grated lemon rind
1/3 c. lemon juice (3 lemons)
1 c. sugar
4 Tbsp. cornstarch
1/4 tsp. salt
1 1/2 c. boiling water
2 Tbsp. butter
1 baked (8-inch) pie shell
Preparation

Mix together egg yolks, lemon rind and juice; set aside.
Mix sugar, cornstarch and salt in saucepan.
Gradually stir in boiling water and cook, stirring constantly, until clear and thickened (2 to 3 minutes).
Carefully stir in egg-lemon mixture; cook, stirring for 2 minutes.
Remove from heat; stir in butter.
Cool 5 minutes.
Pour into baked pie shell.
