Ingredients

3/4 c. shortening
1 1/4 c. sugar
2 eggs
1 c. shredded coconut
2 1/2 c. sifted flour
1/4 tsp. salt
1/2 tsp. baking soda
3/4 c. orange juice
3 Tbsp. grated orange peel
Preparation

Cream shortening and sugar together.
Beat in eggs.
Beat in coconut.
Sift flour, salt and baking soda together and add alternately with orange juice to creamed mixture.
Beat until smooth while adding.
Drop by teaspoon on ungreased baking sheet. Sprinkle with additional coconut and orange peel.
Bake in hot oven (425\u00b0) for 10 to 12 minutes.
Yields 48 cookies.
