Ingredients

1 1/2 cups graham cracker crumbs
1/3 cup lemon juice
1 stick of butter
2 - 3 Tbsp. lemon rind
3 eggs
1/2 cup sugar
2 cups cool whip
Preparation

Prepare graham cracker and butter crust into a 9 inch pie or quiche dish.
Mix 3 egg whites until fluffy and add sugar until stiff.
Mix egg yolks until thick and fold into whites.
Prepare 2 sups cool whip, 1/3 lemon juice and rind of lemon.
Fold into egg mixture.
Sprinkle about 1/4 cup of graham crackers on top.
Leave in freezer overnight.
