Diabetic Muffins - cooking recipe

Ingredients
    2 c. raisins
    2 c. water
    1 c. applesauce
    4 pkg. Sweet 'N Low
    2 tsp. baking soda
    1/2 tsp. cinnamon
    1 tsp. vanilla
    2 eggs or egg substitute
    3/4 c. oil
    2 c. flour
    1/2 tsp. nutmeg
Preparation
    Cook raisins in water until all water is absorbed.
    Cool.
    Add remaining ingredients.
    Bake at 350\u00b0 until done.
    Makes 24 medium sized muffins.
