Rig Taters - cooking recipe

Ingredients
    8 clean baking potatoes, quartered longways
    2 sticks butter, squared
    1 1/2 onions, diced
    1 1/2 green peppers, diced
    1 1/2 c. Cheddar cheese, shredded
Preparation
    Arrange quartered potatoes (unpeeled) in bottom of 13 x 9-inch baking dish.
    Put pats of butter all over the potatoes.
    Add diced onions and green peppers over potatoes and butter.
    Cover with aluminum foil and bake at 350\u00b0 for 45 minutes to 1 hour.
    Remove foil.
    Spread cheese over and return to oven until melted.
