Microwave Tarragon-Vegetable Medley - cooking recipe

Ingredients
    2 c. cauliflower flowerets
    1 carrot, cut in strips
    1 onion, cut in thin wedges
    2 Tbsp. water
    1 green pepper, cut into squares
    1/3 c. ripe olives, halved (optional)
    1 Tbsp. sugar
    1 Tbsp. oil
    1/4 tsp. salt
    2 Tbsp. wine vinegar
    1/2 tsp. dried tarragon, crushed
    walnut halves (optional)
Preparation
    In 1 1/2-quart casserole or baking dish, combine all veggies, except green pepper with water.
    Cook, covered on High about 5 minutes or until almost tender, stirring once.
    Add green pepper. Cover and cook on High 1 to 2 minutes more or until tender.
    Add olives.
    Stir together vinegar, sugar, oil, tarragon and salt; then stir into veggies.
    Cook, covered for 30 seconds.
    Serve hot or cold.
    Garnish with walnuts.
    If serving this cold, just marinate in vinegar dressing.
