Danish Cauliflower Soup - cooking recipe

Ingredients
    1 large head cauliflower
    4 Tbsp. butter or margarine
    4 ?? flour
    5 c. chicken broth
    1/2 c. minced onion
    1 c. minced celery
    1 c. half and half
    salt and pepper to taste
Preparation
    Break cauliflower into flowerets.
    Boil in chicken broth until tender.
    Remove from broth; mash with fork.
    Save broth.
    Melt butter or margarine.
    Saute celery and onion.
    Add flour; mix well.
    Add reserved chicken broth, a little at a time, stirring to keep smooth.
    Simmer about 5 minutes.
    Add the cauliflower and half and half; heat thoroughly.
    Do not boil.
    Freezes well. Serves 5 to 6.
