Sweet And Sour Pork Roast - cooking recipe

Ingredients
    4 to 5 lb. pork loin roast
    1 Tbsp. salad oil
    2 cloves garlic
    1 (29 1/2 oz.) can pineapple chunks
    1 c. sweet mixed pickles
    1 (16 oz.) jar red maraschino cherries
    5 tsp. cornstarch
    2 Tbsp. cold water
    1 Tbsp. soy sauce
    2 tsp. salt
Preparation
    Remove roast from fridge and allow meat to come to room temperature.
    Carefully insert meat thermometer, so that bulb doesn't touch a bone or is embedded in fat.
    Place on rack in shallow roasting pan.
    Put in preheated oven (325\u00b0).
