Confetti Scalloped Potatoes - cooking recipe

Ingredients
    1/2 c. butter or oleo
    1/2 c. chopped onion
    1 pkg. (16 oz.) frozen hash browns
    1 can cream of mushroom soup
    1 can milk (soup can)
    1 c. shredded cheese
    1 small green pepper, cut in strips
    2 Tbsp. chopped pimento
    1 c. cheese cracker crumbs, divided
Preparation
    In a skillet, melt butter. Saute onions until tender.
    Stir in potatoes, soup and milk.
    Add cheese, green pepper, pimento and 1/2 cup cracker crumbs.
    Pour into a shallow casserole dish.
    Top with remaining cracker crumbs.
    Bake at 375\u00b0 for 35 to 40 minutes.
